Ingredients:

  • 1 lb mutton or lamb mince

  • 1/4 cup finely chopped onions.

  • 1/4 cup finely chopped mint leaves.

  • 1/4 cup finely chopped cilantro.

  • 2 tbsp ginger-garlic paste.

  • 2 tsp red chili powder

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp garam masala powder

  • Salt to taste

  • 1/4 cup yogurt

  • 2 tbsp gram flour (besan)

  • 1 tsp lemon juice

  • Skewers (soak in water for at least 30 minutes before using)

  • Oil for brushing    

Instructions:

In a large bowl, mix together the mutton mince, chopped onions, mint leaves, cilantro, ginger-garlic paste, red chili powder, ground cumin, ground coriander, garam masala powder, and salt to taste.


Add yogurt, gram flour, and lemon juice to the meat mixture and mix well.
Cover the bowl with saran wrap and refrigerate for no less than 2 hours or short-term.


Divide the mixture into small portions, about the size of a golf ball.


Roll each portion into a sausage shape and insert a skewer through the center.


Heat a grill or griddle over medium-high heat. Brush the skewers with oil and place them on the grill.


Grill the kebabs for about 8-10 minutes on each side, or until the meat is cooked through and slightly charred on the outside.


Once cooked, remove the skewers from the grill and let them rest for a few minutes.


Serve the Kakori kebabs hot with mint chutney or any chutney of your choice.
