Classic Steamed Idli Recipe


Ingredients:
  • 2 cups of parboiled rice
  • 1 cup of black lentils [urad dal]
  • 1 tsp of fenugreek seeds
  • Salt to taste
  • Oil for greasing the idli plates

Instructions:

1. Wash the rice and urad dal separately and soak them in water for at least 4 hours.
2. Drain the water and grind the urad dal into a smooth batter using a wet grinder.
3. Add the fenugreek seeds to the urad dal batter and grind for a minute.
4. Next, grind the soaked rice into a smooth batter.
5. Mix the rice batter with the urad dal batter and add salt to taste.
6. Cover the mixture and let it ferment overnight (around 8-12 hours) in a warm place.
7. The next day, the batter should have risen and become frothy. Give it a good mix.
8. Grease the idli plates with oil and pour a ladleful of batter into each mold.
9. Place the idli plates in a steamer and steam for 12-15 minutes, or until the idlis are cooked through.
10. Once cooked, remove the idli plates from the steamer and let them cool for a minute.
Use a knife or spoon to gently remove the idlis from the plates and serve with chutney and sambar.

• 1 cup of semolina (sooji or rava)
 • 1 cup of yogurt 
• 1 cup of water
 • 2 green chili peppers, chopped
 • 2 tbsp of ginger, grated
 • 1 tsp of mustard seeds
 • 1 tsp of cumin seeds 
• 1 tsp of urad dal
 • 1 tsp of chana dal
 • 10-12 curry leaves 
• 1 tbsp of oil 
• Salt to taste
