  • 1/4 cup chopped cilantro.
  • 1/4 cup chopped mint.

Instructions:

Flush the rice in chilly water a few times until the water runs clear. Soak the rice in water for 30 minutes.
In a large pot, bring the water to a boil and add the rice. Cook the rice for 8-10 minutes or until it is just about cooked through but still slightly firm. Drain the rice and set it aside.
In an enormous dish, heat the oil over medium intensity. Add the onions and sauté until they are golden brown.
Add the ginger and garlic and sauté for a couple of more minutes.
Add the mixed vegetables and sauté for another 5 minutes or until the vegetables are just about cooked through.
Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt to taste. Mix well and sauté for a couple of more minutes.
Add the cooked rice to the container and blend well. Add the chopped cilantro and mint.
If you like, you can add 2 tablespoons of ghee or butter on top, this will give a nice aroma and taste to your biryani.
Cover the pan and cook the biryani on low heat for 10-15 minutes or until the rice is cooked through and the flavors are well combined.
